What's For Dinner Tonight?

Wild caught or Farmed Salmon?
Wild is the only way to have it. I live min the mid south and no where near any water for amazing fish. Like Jack salmon, copper river salmon (all of their fish is in season and flown in fresh 3 to 4 times a week), and some kickass sea bearing fish.

I am a chef as a side profession and I cannot sacrifice quality or cheat for that fact. My microwave is used to store bread, it will actually keep your bread twice as long. :)

Is that a chicken wrapped in bacon, or is it a different type of foul? What's in the foil pan, dressing/stuffing mix? With apples, celery, onions, bread crumbs, and sausage, am I close?

Is there going to be a finished picture or is this just a tease of what was to come?:) Just playing! Happy holidays

The beginning of that dish looks great!

Yes, Chicken wrapped in bacon with some spare stuffing inside. Drip tray is full of stuffing. Which was lemon and pork sausage meat mixed with breadcrumbs, walnuts, peanuts, cashews, raisins, dried mango and apricot and fresh apple chunks. Some cumin, sage, paprika and salt and pepper.
Never got many shots round the braai. Gotta keep up with the inlaws family beer drinking. We were up in the Amatola mountains for Xmas. Eastern Cape South Africa. Monkeys swinging by for breaky.in the trees. Incredible chilled time.

Anyway...food ffs:)
we also done a leg of lamb and a gammon natcho.
