I like the idea I'm currently doing something similar I'm going perpetual. Only issue I see with Your Design is you want to have different nutes with putting in a different stage plants..may be confusing IMO. If you run every 3 weeks you're putting in new plants may be better while running...

Like other guy said it depends on how much room you have. Personally I flip 1 foot 1/2 to 2 foot tall. If this is your first time flowering out this strain I would not top and see how well it grows. Good lookin indica
