Alfalfa smell?

Alright so we have some plants about ready to be cut...GDP, Cherry Pie, OG Kush, Blue Cheese, Chemdog Purpz and a baby OG Fire that has a badass little bud on the top. Anyhow we have been clipping here and there off some of the plants before we cut..it's an outdoor grow and each plant is just covered in those delicious little crystals. The first time we tried to dry/cure it had an alfalfa smell which I am pretty sure was due to drying it way too fast. So we clipped a little more and we went right to the jar and are currently drying it out of that. The buds kept their smell for a good while..were moist..no mold. And this morning they seem to be going south...I did leave them open over night which may have been the issue. I live in Fresno, CA which is in the middle of a valley desert so we still have some heat..yesterday it was 98. The air is very dry here also so the buds have that against them already. Anyone have any ideas on how to counteract these issues? The cheeses are coming down first..actually tomorrow morning around 4 am or so (Sat) but the GDP, Cherry, etc. all have about 2 weeks left so the temperature will go down for sure. In fact this weekend it's dropping to about 74 or a bit lower and that is the end of the heat I imagine. Any help at all would be really appreciated :lol:

I don't quite understand what you've done to them.
Have you dried the buds before you cured them?
You shouldn't leave curing jars open over the night, defeats the purpose of curing.
But it sounds like you've misunderstood how to dry & cure.

Can you give me some more info please?
Your setup, Temp, RH etc.
