Can I start the curing process before deboning?

hey guys!

So I am about to run into a problem. I have to leave town for thanksgiving and it's right around the time I need to cut down.

Perfect world, I would like to chop the plants down leaving them whole. Let them dry for 6-7 days then store them in plastic bins with boveda 60% bags for about 5 days until I can get back to them and finish the process.

Would I run into trouble doing this? Any suggestions?

Cut all the fan leaves off. Dry them for 5-6 day. Put them in the plastic bins for 18-24 hours to sweat. Pull them out to dry again for 18-24 hours again and then back in the bins with the boveda packs until you return.
