Can you help with wiring?

Hi guys can someone please explain to me how the "3 wire control" diagram relates to physically wiring up this fan controller [Intervent varispeed single phase 240v]. I know the shot of the controller has it all labelled up for me, just wondered what the "bouncy" bits in the wire on the schematic meant.

What the wavy line represents in a schematic is usually a coil or whatever would be actually using the electricity. Now since im from the us im not familiar with this type of schematic, so im not sure what the L N and uz designations are. Sorry couldnt be om more help.
