Indefinite dry/cure

I'm drying at 60degrees, 62% humidity, it's been almost a week and they need 3-4 days longer, everything is looking spectacular. Do you think I can just leave them in that environment as long as I want, I mean, it's the best cure numbers, I would just walk in and get what I need each time. Or should I cut it all and jar it?

Not indefinitely but certainly you can leave them another 3-4 days to dry out a bit more, then jar/cure them. If you leave them too long they'll start to deteriorate and change significantly in colour, smell, and taste. I've tried leaving them in a similar environment for up to 5 weeks, while they were still Ok and not too dry, the colour changed to a goldish colour and tasted like shit, it's like they lose their terps.
