Looking for some scientific info

Ok, so I read what I could find on the forums about leaf curling, cupping, folding, taco, etc... and I got enough info to get the general jist of it all. However I'd like some real info on how plants control their temp and moisture levels. Like not just "leaf curls up because it's too hot or has too much wind blowing over it" I'm looking for the reasoning why they do it and how they do it. I've recently had a wind/heat problem that's solved now but I want to be better armed with knowledge of why doing what I did fixed it. Thanks for all the info everyone provides it's really helped me out since I first started. Someone school me please!!!
