Take note of stamets silence when it gets to the subject of commercial mushrooms and his seeming fear for his and his families safety.
The root of this is that he and a few others discovered that agaracine is a volatile carcinogen that is inherent in agaricus mushrooms.....those button mushrooms you can buy in the store are carcinogenic. Cooking does not remove the toxin.
The industry doesnt like him talking about it.
Oh, and if you eat balanced meals, avoid raw mushrooms (save for the ones we know here), you should never eat any mushroom raw. You probably have more to fear from pretty much anything.
