how high should be the temperature to evaporate the alkohol with the herbs?
The boiling point of ISO, 82.6C or ethanol, (booze), 79C is low enough that a pot of simmering water under whatever the alcohol mix is in is good for evaporating off the alcohol. Make sure there is lots of ventilation to get rid of the flammable fumes. In the case of ISO the fumes are also toxic tho less so than methanol, aka methyl hydrate, aka wood alcohol that is widely available and can be used for extracting oils but not for use as tinctures. Only ethanol should be used for tinctures.

No smoking either!
