Working at a dispensary in California?

So my friend knows this guy who owns a dispensary that I live near and said I could walk in and pretty much be guaranteed a job if I put him down as my reference. I already have a job at a golf course which I already have plans to quit in the near future so it would be pretty nice to have much time between jobs. But my questions are relating to legality...
1. When I asked him if he knew how much I would be making he said "A lot. Mostly cash prolly." meaning it'll probably be under the table... is this probably going to be case working at any dispensary?
2. Is there anything I would need to know before I accept the job to help protect me legally?
3. What do people do that work at dispensaries when it comes to taxes if the money is all under the table? I'm a college student so idk that helps or hurts me so any information you can give me on the whole taxes thing would be very helpful.

Really any information on the job would be helpful if you work for a dispensary in California, especially in the South Bay Area like San Jose.

Do you have big boobs and a cute smile ?

Seriously Google your county and city. A lot of counties banned dispensaries , doesn't mean they don't operate. The tax thing can go a few ways. Im not an accountant.Heres the basics .If you aren't 1099 from the shop you won't be required to pay taxes you won't have proof of employment if needed . Now you can turn around and file taxes and pay if you so desire .

Unfortunately I'm a guy so I don't have the big boobs. Thanks for the info on the taxes and stuff though!
