No way I'd pay $800 for that table...I wouldn't even pay $100 for that...I'd make my own for less than $40 and I'd get the satisfaction of welding it up myself...
I just let my normal starter sit for 2 days on the counter without feeding it...it goes dormant after a while, and gets quite sour without refrigeration. Just feed again to activate it or use it as is. From that point on, the starter is sour.
I saw that dude....I saw that that at whole foods the other day (making a delivery not shopping), and "they" were gently stroking each avocado and stacking them on the display in a orderly fashion while other shoppers gave "them" a wide berth...strangest thing I ever saw....almost.
