I believe it to be a matter of preference. I like to trim as needed during veg, and a fairly strong defoliation just before flowering. Some folks trim lightly as needed throughout the life of the plant. Do some research on different techniques (plenty here) and Do what works for you and your plants, but go slow; you can always take more if needed. There is little harm in gentle experimentation.
