What size are those pots? I would get a feel for how much they weigh when the first set of leaves start dropping just a little bit, don't always do this just once. Then water them and feel the weight of when their fully watered. Don't set yourself on a scheduled watering day. Always go by what the pot weight tells you.

I only water underneath what the leafs cover. The root mass isn’t reaching the edge of the pots yet so I use that as my guide until they grow into the container. The root mass is about is wide as the plant above soil is and about as deep as the plant is tall. That’s a rule of thumb for early growth like yours. Too much water and you can cause problems and it will give you false readings on when you need to water again as there are no roots on the edge to suck up that water. You’d be fine watering with about 2-3 cups all underneath the leaves and then waiting until the top inch of soil feels completely dry to the touch.

There in 3 gallon pots...how much should I water them like 3/4-1/2 cups of water to start or start with a cup that’s where my problem lies once I have that figure out then I can go by the pot I just don’t want to over water them...

I would wait until the soil is dry then water probably close to 2 to 3 liters of water. Water gently and all over the soil evenly. Afterwards, tilt a pot over or pick it up to get a feel for the weight. If your plants are growing fast you should be watering every 2 to 3 days per plant. Good luck and feel free to ask as many questions as you want.

Looks like Pro-mix or something. What kind of grow method is this anyway? Nutes on every watering with HP medium? If so, treat it more like coco. Keep it all moist because if it dries knuckle deep, it will be just as dry where the roots are.

If you're doing soil on the other hand, you shouldn't just dribble water on the surface around the plant either. It should be moist all the way through after watering.
