Last night's pork fajita stuffing. Son said it smelled good when it was on the BBQ, tasted pretty good on a flour tortilla also. That recipe is a keeper. Had to add to it because the chops were pretty big and it wouldn't cover them so I just added summa the called out ingredients to make it work. Should have added some more peppers and onion also. I like the heat from the chipotle pepper powder, warm but kind of a creeper hot.

That looks, and after reading sounds, delicious. Looks like I'm going to have a hard time finding Guajillo chillies, so far found only options to order online.
Amazon is my lifeline. This has everything you need to make several batches. Ancho chilies can be used as a substitute for guajillo

The recipe I use. It calls for lamb but pork is so much cheaper and lamb shoulder can be hard to find.

Last nights dinner, hey I was hungry after slaving over a hot stove all afternoon. Like the vinegar bite in the potato salad.

Wrote down the recipe for bread machine donut dough so I am one step closer. I was thinking about using the seed starter heater under the dough to proof it, I'll check and see how warm it gets. The quartz counters stay cold all the time.
