So how long do you wait after pollinating a plant, for the seeds to mature?

The last cross I made between a Chemdog x D NL#5 and a Godberry, was due to lack of smoke harvested after 45 days, this female Godberry had been pollinated at day 10 of flower, the 4 seeds I got look nice dark and healthy, which I found odd, hence from other experiences they need longer time to mature.

The time before that I pollinated some girls at day 14 and harvested them at day 60, all 55 seeds except for 5 were dark and viable, some are growing at the moment.

I would say wait at least 8 weeks to ensure the seeds are properly done and store them in the fridge...

I really have made quite a few personal beans but am always doubting myself on this, got some now 35 days since pollination, seeing cracked calyxes and some dark brown seeds.

When I manually pollinate I usually wait until the plants are about 2-3 weeks into flower. Once pollinated it'll take around 5-6 weeks for the seeds to mature. This however is for the majority of the seeds to mature, some of them at different parts of the plant will mature a little faster than this. There are certain parts of the plant that always seem to have mature seeds like 2 weeks after pollination but the majority of them would not be ready at this point.

I polinate between week 2 and 3 of 12/12 flip.

The seeds need between 5 and 6 weeks to mature. Some might still be too soon, but the majority will be done. You can press your seeds between your fingers or with your thunb on a table. if they crush easy they aint no good so just trash those.

I just harvested a few weeks ago and made few seeds on some branches and 90% are mature from all 3 different strains with this timing.

My best germ rates came from pollenating around day 20-28 and harvesting around 63-70 days for most 9 week indica varieties. If I were pollinating a 14 week sativa like Thai, I recommend around week 7 and then harvesting around week 15.

I pollinate at around 2 weeks into flower, once the bud sites show a decent amount of pistils, and then typically just let the plant finish....but that's based around the idea that you should give seeds at least 6 weeks to mature, so it just sorta winds up roughly coinciding with when the plant finishes.
