Tuscan Tomato Bisque

Ingredients:

2 TBS butter
1 large onion
3 cloves garlic
1 red pepper diced
4 cups peeled tomatoes
1/2 cup roasted garlic tomato paste
2 cups chicken stock
2 1/2 cups baked Butternut squash. Peeled and cut up.
2 TBS chopped fresh basil
1/2 tsp thyme
salt and pepper to taste
1/4 cup heavy or light cream (depending on your diet)
Tabasco sauce to taste (I prefer a little more for heat)

Cooking Instructions:

Bake squash upside down on cookie sheet. Cool. In large pot, saute onions, red pepper and garlic until onions and peppers are soft. Dip Tomatoes in boiling water; peel & core and cut up in chunks. Add tomatoes, tomato paste, chicken stock, basil and thyme. (If you can't find tomato paste with roasted garlic then try roasting some in the oven and adding them to your paste) Peel and Cut cooled butternut squash in chunks and add to pot. Bring to a boil; then simmer for 35 minutes, stirring often. Puree in blender or food processor and return to pot. Add the Tabasco, salt and pepper and stir in the cream. Enjoy!

I served this with grilled 3 cheese sandwiches on raisin bread. Wonderful meal. :)
