I've been checking out ec meters. If I mix up a 50l Res with the recommended nutrient amounts and then ph the solution,
what extra benefit could the ec meter do for me???

Depends where your getting your water from cap... if ya waters ec is 0.0 then you dont really need one

There will come a time when you say

'shit, was that the 4th or 5th...did I add that already...where am I'. Your ec meter will save the day.

I'm happy to get one, but I still can't find anywhere to tell me exactly what the benefit is..
As I said I use a res with the recommended nute amounts and then PH it before turning pump on for plants.
Does it tell me if the nutes are too strong or weak???? Is that what it does by calculating my water quality as well..???

Cap it gives you an idea on what nutrient strength your running throughout the coarse of the plants life... So you dont over do it under do it find the sweet spot and ride it home!
