    YES!!! he's right 180 is too hot. 160-165 should be as far as it goes, even at that just aim for at least 131 and you'll be fine.

    I should've specified my brew temps. I use an airlift brewer and have brewed no longer than 48 hours. I shoot for 24 hours mostly. Since I'm brewing in the basement my ambient temps are around 60-65. Haven't gone anaerobic yet :-)
