I knew about the small bottle method, but the above describes a larger, garbage-can sized container with only weekly maintenance rather than daily. interested in that for my own education.

for the fermentation method, do you have a more detailed description (maybe some diagrams/pics)? It seems to jump from a small starter container to the large one with no description of how it is constructed.
most bottled "spring water" (in the US) is actually just straight out of the municipal water supply wherever it is bottled. very little comes from a spring in the ground. it may or may not be better than your tap water.
distilled water has most of its minerals leached out before bottling. I...
