1000 watt DE's and 8 foot ceilings may be an issue. Maybe keep low profile plants via training methods or a short strain. Ive found that 30 inches is a minimum from top of plant to lamps, manufactorers say even more. Cooling is another issue. Probably going to need a 3 ton A/C for 6.
Good luck on your path, DE's is the best tech out, ridiculous yields, and ridiculous health to plants.

8 foot ceilings is going to be very tight unless you put the Gavitas in the ceiling. I've seen a few guys who have cut out holes in the ceiling and recessed them into the cut out but it's a lot of work. The recommended spacing for 1000W DE gavita is about 3 feet from the top of the canopy and you're going to lose a couple of feet from the ceiling to the bottom of the gavita light. That only gives you about 3 feet to work with which isn't a lot.

I may be Able to get the lights up to 10' because the cieling is peaked I'm thinking 2 rows of 3 of the de 1000 if I can get them 10' high with either a a 36,000 btu mini split or a three ton full split

you could always run the de 600/750 gavitas. I run 2 of them at 825w with no problems and my ceiling is only 7'9"
