Everything I have seen is filled with the highest fat content possible so that the THC has the best chance of "sticking". Is there anything out there I can make that isn't super fatty? I am not familiar with any recipes like that.

You can make an alcohol tincture and add it to whatever food you like. The alcohol will evaporate during cooking. Just make sure the temps don't get too hot while cooking or else you make lose some THC...

Or, I've also heard of pre-baking the plant material. (this would be important)
That is, put material in a ceramic/glass(as I recall) container and bake according to temp and time. I've seen higher temp quick-bakes and lower-temp long bakes. Never done it. So I'll leave it at that. You end up with slightly cooked smelling weed... not sure what you'll do with that!

I suppose pre-baked kief or even shake(gag) might work in a smoothy. Perhaps a coffee grinder first....

You can eat fan leaves raw, they're a leafy green, and as such are quite nutritious. Pre-baked to activate THC might even make get high... don't know about taste! Perhaps in a pasta sauce, tossed with noodles garlic and olive oil.
