If you buy the ceeds you can do it yourself, if you so choose.

Yes and no.
No plant will flower until its sexually mature. That typically means 3-4 weeks of veg time before most female plants can make flowers.
Its has been my experience that older plants will "flip" faster into making flowers after light restriction compared to younger ones, but its a pretty minor effect; maybe a few days faster for older plants.
The main reason to veg longer is just to create larger plants, for better training and potentially larger yields at the end of flowering.

A great strain thats gonna be ready around 50 days is Critical mass By the CBD crew. excellent genetics! 2 of my phenos were ready at 7 weeks, one coulda probably gone another week or 2 so there all probably not gonna be 50 dayers. super dense buds at 50 days.
i got a black russian that I've had to cut down at 5 and 6 weeks cause of herm issues but i bet if you found a winner it could have some great buds at 7 weeks. by 5-6 the buds are ROCK hard.

I'd go with mr. nice's Critical Mass for recreational use yields like a bastard and all around a great commercial strain nice bag appeal good potency ok taste and smell from the 6 girls I got out of half my pack they all will sell great on the east coast anyway. but the cbd crew one is still bred by Shantibaba but it breeds true for high cbd which counter acts the effects of THC but its great for medical. I'd recommend the original CM for commercial use as its great all around and everyone I got beat most all the commercial indoor on the east coast but not really if you want the best weed known to mankind which OP sounds like he's in it for the money. Also mr. nice Shit yields pretty good but it tastes a lot better imo plus its cheap as hell no way you'll be disappointed as it took me some time to figure out which one too keep as a mother a few weren't nothing special though.

The Anesthesia I grow is from Pyramid seeds, takes 8 weeks, but well worth the few extra days. Easy to grow, Yields well, clones well, best bud density I've grown. The potency is top shelf.I've heard a lot about anesthesia ? What breeder is it from?
