Does our international mail come through LA when ordering from Europe via 'airmail'? I'm thinking about ordering some seeds and see all of the horror stories about Chicago nabbing them.

Most of the time LA but it can come from anywhere. Customs don't usually snag nowadays its the dept of agriculture. It's a crap shoot anymore.
