I grew up with parents that were raised on farms that were greatly impacted by the great depression. Even though both my parents worked we always had a large garden and we always had a few pigs , chickens and cows for milk and beef.
We always had canned veggies and salt cured pork and both of those things were items that I made sure that I fully understood how to do prior to my dad's death. I have a large supply of canned vegetables and 2 hams & link sausage hanging now. I get great satisfaction when I eat something that our family has grown or raised.

My dad was raised with ten brothers and sisters in a one room dirt floor shack.

It caused him to raise my brother and I to be able to feed ourselves.

This is Tim Farmer. He worked for fish and game and KY Afield for 25 years. He lost The use of one arm due to an accident. He still shoots a bow with one arm. He is a bad ass. He pulls it back with his mouth.

I've got canned goods from several years ago that is fantastic upon opening.
BTW, since it hermetically seals the cans, once scrubbed no odors can escape unlike vac bags and their ilk.

Not to induce anyone to think of another application for this technology. :cool:

I'd say that would work like a charm. I'm kinda leary when it comes to canning meats with just the common canner/pot. I've had some cans not seal,and when it comes to stuff like this you gotta make damn sure you get good seals.

I've been canning (mostly halibut) for almost 30 years with this same unit with never a problem, but I follow directions to the letter and always check to make sure there are no bubbles when they go from the pressure cooker into the cool water bath. Once dried I also check to ensure the lids are concave.

In addition you always want to make sure you listen for the sucking sound when you begin opening them - I've got canned goods from 3/4 years ago that is just as good as the day it was sealed.

I thought I said he was retired. I implied it. Yes he is retired from KY Afield but still has two other TV shows. One is a cooking show. I forget the other.

I met him once. They were filming on the Barkley Dam. Pretty cool dude. I suspect he is pro cannabis. I have not proof, just a hunch.
