Always pH your water.
If you don't, you can cause a pH fluctuation (which in turn can harm your plants, even in late flowering).

Why should it be any different how much the plant is into flowering?
Nutrients aren't the only substances reacting to pH levels.

Plants watered (or flushed) with tap water / plain water almost always exhibit signs of pH fluctuation due to the grower pH leveling the water up until the plain watering.
A jump from 5.5-6.1 pH in a hydro grow (optimum range) to 7-8 pH (tap water) can very well cause problems.

On another note, not everyone flushes.
Hence the need for constant pH control to not stress the plants.
