Ebb and Flow Table with Bubbleponics

Hello Everyone, long time listener, first time caller.

So I have recently started a project that uses both ebb and flow and bubble. I'm having some trouble with the bubble and I'm possibly second guessing myself. So, I thought I'd put it out here and let you all poke some holes in my plan.

I have a two level table:1.2 m x 2.1 m.
The bottom serves as a 10cm deep reservoir, the top is a 6cm deep table.
I put a sink drain in the slightly lowered end of my table that I can adjust for flow rate with a lever.
I put a cover on the top and have 21 evenly spaced holes for plants in three rows of 7.
I put bucket lids with 5" net pots in each hole.
I have a pump moving water from reservoir to the top that can get water to all plan roots within 3 minutes, has bottom of basket submerged on all within 8 minutes and is full within 15 minutes of turning on.
I have a pump moving water from reservoir to top to 3 tubes running the length of each respective row of 7 plants. Has water to the roots from above within 30 seconds of turning on.

My plan is to run cycle like this:
8pm day 1, first run - water kicks on, squirters squirt, flood floods
11:15 pm water stops
11:45 table is 99% dry and roots kick into "drought" mode
12pm second run - water kicks on, squirters squirt, flood floods
3:15am water stops
3:45am table is 99% dry and roots kick into drought mode
4am third run - water kicks on, squirters squirt, flood floods
7:45 am water stops
8:am lights out
no activity for 12 hours
8pm day 2, first run
and so on.

I'm coming from deep water culture and had great luck with big plants but I never did a single drought. I'm kind of scared here. I'm taking a friends advice, and ignoring some particular advice from others in order to compromise. I am fairly confident the system will work if I time things correctly and don't allow my roots to get too dry. I also think there may be some potential hella challenges around a 110 gallon reservoir.

So, can anyone tell me if I'm making a big mistake here with this "drought" concept? I'm told it can really make a difference but not to overdo it. Is my 15 minutes without water too much, not enough? I expect to tune it from experience but your opinions matter.

Also, what should I watch out for with a reservoir this big? Do I really need to empty this whole thing every two weeks?

An update I guess. I fixed the drip problem with a new system. $60 bucks and I'm dripping on 21 plants like a dream.

I added two 8" circular air stones to the reservoir.

I lowered the high end a tad so there is less of a difference between the water levels at top and bottom end of the table.

I got an EC meter. Nice Bluelab stirring stick one. Love it. Out the tap we're 80. Not concerned.

I cleaned up flower and veg rooms. We're at pre-quarantine.

I've got the water flowing and all is good. PH is 6.2, temp 69.

Pineapple Express babies are almost 18". Should put them in on Sunday.
