Im in week 5 of flower and have had an accident. A fan has fallen on a plant and smashed some of the colas stalks is there anything i can do to try and salvadge it?

If they are broke use a rooting compound or B1 and a stick. Put compound on brake and tape stick to it. Don't put tape on brake but about a inch above and below. But if not broke just bent. Use a string and pull them back to place. You will see stress but after a week or so should be fine. Good luck.

Oh also what if the broken stem has dried out a bit cos happened during the night?

All you can do is try. If it dosnt take. Just cut it off and dry. Then smoke it. Won't have the full affect but if you smoke enough you will be happy.
