Hot Sauce

Well, my non-Mary garden is producing its peppers in bountiful supply. Yesterday I ran through my first batch of hot sauce and made 14 gallons of hot sauce. The peppers I grew this year are:

Variety of Bell, sweet, and Carmen peppers, from banana to black mole.
Carribean Red Habanero, Orange Habanero, Red Chili Pepper, Tabasco, Thai Red Dragon, Naga Jolokia Bhut, Cayenne, Jalapeno, Scotch Bonnets, and a few more.

For my first batch I made a base sauce with 250 Habaneros, about 150 Cayennes, 100 tabascos, 100 thai red dragons, fresh sweet vidalia onions, fresh dug garlic, locally harvested honey and molasses, natural turbinado sugar, a few organic spices, and some fresh sweet cherry tomatoes from my garden. Everything with the exception of the spices, sugar, molasses, and honey was grown and harvested in my gallon.

I then took the base and made three different kinds of hot sauce, adding a dozen peaches to one batch, a pound of carrots to another and 15 bell peppers and sweet peppers to the last one. I ended up with three very tasty long burn peach habanero hot sauce, carrot habanero (which is more of a standard flavor amongst hot sauces), and my favorite a sweet pepper medley hot sauce.

Just excited and thought I would share, probably my favorite thing outside of green cultivation is making hot sauces. :)

The Bhut's are just starting to come in and that is my next project hot sauce. I will also be making some cayenne sauces, and infused pepper sauces with each of the peppers.

I got a nephew that loves hot sauces. Can you recommend some good recipes or do you sell your own creations?

Watch out with those Bhut's. They are responsible for at least one death. Coma after eating dad's home-made chile, that night- boom. Dead.

I have some Naga's :)

damn, you made my mouth water! Sounds like you could start your own hot sauce company. That habanero & peach combo sounds killer. Love to see some picture,please :)


Also a recipe on how to make our own would be awesome. If you don't mind.:mrgreen:

I've got a whole heap of Cayenne's about to ripen up. I'm strongly considering getting in on some of this hot sauce stuff. Might even ferment 'em, if I can get around to it.

we should be best friends!! i have a massive pepper garden and ive been making so much hot sauce i dont know what to do with it. i went nuts this year and seriously bought every single pepper that was for sale in a 25 mile radius from me. i made a few batches of tabasco, habaneros, my favorite are my arbols. also made a few batches with the thai hot!! man nothing like making home made hot sauce. my friends are always hittin me up now asking if i have anything for them! haha im thinking about setting up a farmers market booth!!

some one should come up with: Dank's Purple Pot Sauce, kush infused hot sauce that not only tingles the tastebuds in your mouth but also the thc receptors inside your brain!
I'D PUT THAT SH*T ON EVERYTHING!

haha there are a few cannabis clubs here in los angles that i have seen thc hot sauce at!!!! seriously.. ive seen thc beef jerky..
