You will want to water until you have maybe a gallon or so of run off. The main goal is to water enough so you can clear out all the old nutrients in the coco that will crystallize when they dry.
As far as watering schedule, I find coco will dry at much different rates depending on the temperature of the day so don't stick to every X days if you have changing temps. Also keep in mind your plant will use water at a faster rate as it gets bigger.
You can still use the "stick your finger in to the knuckle" method that they use with soil to determine the wetness of the coco. That and just pick up the pot and you will be able to feel if it needs any water. What pot are you using?
