which hydroponics would be best for person with 1 arm

I think hempy or just go soil with autodrippers. Probably not something aero-ish with sprayers you'd need to check.

probably ebb + flow with plants in large net pots full of cocochips + hydroton\growstones in slab trays.
The large net pots make the plants easy to move around until flowering starts and roots are ready to spread.
Its the simplest plumbing wise.

Dwc bucket would be the easiest.

I would think that any system would work fine for a person in this situation. I think the challenge will come in the setup. If setup correctly I think it would be pretty easy to maintain. Maybe?
