Actually, some people won't let the stem get that dry. The bud should feel dry and the stem should not snap. That is the time to start curing in some opinions.

I've always, and the growers I know have too, gone by the clean snap rule. I guess its a matter of preference, but if it doesn't snap well that means theres still excess moisture in there that could turn shit into mold when its in the jars curing.

That is why you have to burp the jars.

The curing process involves controlling the moisture long enough to allow plant sugars to be converted and chlorophyll to dissipate. You don't wait until the stem snaps, that is too dry. Here is a great read, right here in our very own RIU forum...
