Lilly leaves on top?

I've never grown outdoor before, only indoor. I took 2 outside to see how they'd do and they've started growing almost lilly like leaves in the canopy, not the 5 finger fan leaves we know. Is this normal? I went ahead and topped the things to remove this growth, but WTF?

It is averaging 90-95 here in the day, but they are in mostly sun/partial shade and appear to be healthy.

Any ideas?

Stress can cause single leaf growth. It could be excessive amounts of nitrogen, not enough to burn or just hardly burn leaf tips but kept at that level for an extended period of time, and it could be the amount of light. You said "I took 2 outside to see how they'd do." What lighting were the plants under previous to taking them outside? Did you ease them into the sunlight by putting them in partial shade for a while or did you put them right under direct sunlight for much to all of the day? It could be that.

They were under a canopy of 8 flouro tubes. No, there was no period in between, I suppose it's probably shock from the move, I had just never heard of leaf shape changing.

A very simple and completely unscientific way to put it is trichomes protect plants from damaging UV light rays. Trichomes will begin to grow on plants early in plant growth but they will be very small and spread out initially. The more light plants receive the faster their trichome production will be. When grow indoors, especially under weaker forms of lighting, the trichome production will be slower and less dense and if you move your plants outside without first putting them in a shaded area or putting some sort of screen above them to block some sun it is like someone from Canada going to Jamaica in January and spending their entire time there under direct sun without using any sunscreen. They fry like back bacon in a pan. That causes stress in plants and stress can cause varying different problems and one result can be single leaf leaves.
