I love making pancakes. It's a guilty pleasure. I've done blueberry, strawberry, made all types of compotes for them, goat cheese and on and on. Usually just something I try out.

This time, I added a bit of oatmeal to the batter, with a light dust of cinnamon. Fried in coconut oil.

And syrup, I spend like $8.00 on 8ozs, so I like to get some nice syrup.

Umm what did you use the other half of stick of butter that you used on your pancakes on?

Ya pancakes kick ass. So much you can do. Lately I've been getting into french toast. Here's my recipe:

BeavTek's Chronic French Toast (makes 6 slices)

1. Get nicely baked.
2. Pre-heat the frying pan on med-high heat and the oven to 425 deg. F
3. Crack 4 eggs into a mixing bowl and beat them until nicely fluffed.
4. Add 1/2 cup of milk, 1 tbl spoon sugar, and 1 tbl spoon of pure vanilla extract and mix well.
5. Sprinkle some cinnamon on the top of the mixture and mix in. The cinnamon will float back to the top.
6. Dip a piece of bread into the mixture, flip and dip, then place on the frying pan.
7. Flip when the bottom of the slice is nicely brown.
8. When both sides are almost cooked, remove from the pan and place on a wired oven rack on top of a baking sheet.
9. Repeat until all of the batter is used.
10. Place the sheet into the oven for 10 minutes.
11. Remove, plate, and add your favourite toppings.
12. Take one more bong hit and ENJOY!!!

It's a lot of work but it is worth it.

Roasted French Toast, Sounds pretty good. when making french toast remember it is better if you leave out a few pieces of bread the night before so they stale up a bit. I don't know why it makes it better but it just does.

how you get the pancakes crispy like that?!
I have a really nice 'no stick' skillet that I ONLY fry pancakes with. I think thats the key to good consistent pancakes. You see the surface of mine, you can get the consistency as perfect as you want. If you don't put ANY oil of any kind with a good nonstick pan, it will come out all same color. But if you want a bit more crispy like mine, use some sort of oil. I used coconut oil this go round.

So basically, a GOOD non stick pan, and you can make incredible pancakes.

Made some French toast, and usually I make it very similar to the way you described. Although I've never added sugar or finished in the oven.

Both of which will now be part of my repertoire for making french toast. I was just trying it out on some cheap bread first. I will grab some day old bread from somewhere for the real batch.

But I found that the sugar allows for a really nice seer on the crust (I substituted BROWN SUGAR). Also finishing in the oven was great cause it gave me a really nice even cook throughout the bread, which I haven't always gotten.

It was very tasty!!!
