It would depend on what the humidity is in your area. And, how long will you be gone?
This time of year, the humidity is high, you can hang the branches in the attic for several weeks without a problem. If your climate is dry this time of year, they should be dry enough in 10 days to pack in jars before you go. They will be fine in sealed mason jars if they are dry (stems snap).
You could also put them in paper grocery bags, then hang them in the attic. Leave top of bag open. This will cause them to dry slower. Chop, hang in paper bags, then pack in jars when you get back.
As long as your attic (or wherever you hang to dry) is well ventilated, you should not have a problem with mold. And, yes, you could vacuum pack the buds if you prefer. They will still cure, but may get absorb some smell from the plastic bags. But they will not mold, and you can dry & cure when you get back.
