I've got a pork shoulder marinading in Mojo Cirillo, citris juices, zest's & spices, it goes into the oven for around 8 hours tomorrow AM for authentic Cuban Pork.
It will be magically transformed into Cubano's on Sunday with black forest ham, baby swiss, dill sackers & mustard.
And of course pressed to perfection.

We used to have a great restaurant in town that had amazing Cubano sandwiches. It was the first time I had tried them and they were really good. Covid killed the restaurant so I'll have to find a place in DC probably to get another.
I really want to get another smoker. A black bear took my last one apart one night a couple years ago. Apparently the brown sugar and honey marinade I used that day smelled really good to a bear. Live and learn :bigjoint:

We used to have a great restaurant in town that had amazing Cubano sandwiches. It was the first time I had tried them and they were really good. Covid killed the restaurant so I'll have to find a place in DC probably to get another.

I hear ya, the sandwich doesn't really sound that fantastic until you've had one done right with authentic ingredients & the flavors come together and you just want more!
I spent many years in S Fla, been to Cuba and many Caribbean ports and have had lots of really good ones, the only thing missing in my repertoire is an A La Plancha but that is remedied using a second cast iron skillet to "press" the sandwich while cooking.

Good luck keeping the bears outta your smoker - I had the same problem with their larger brown cousins in Alaska.

I'm usually good about dumping out the grease trap under the grill as I learned quickly that forgetting to do it meant visitors on the deck. I did a bunch of BBQ chicken and I mixed Sweet Baby Ray's bbq sauce with brown sugar, honey and liquid smoke. I heard it rattle a couple times and then a huge crash. Damn bear flipped it over the railing. Totally my fault for not cleaning it out but I'm much more conscious of it now. I am really glad we don't have brown bears here. They're amazing to watch on the Discovery channel but I'm good on the face to face meeting.

I use a large throwaway aluminum pan as a drip/water pan. Works great. And you can just dump it and use it again, even a few times. I hardly get anything in the grease trap.

The old one was a cheap one from Home Depot that had a grill and a smoker underneath. I'd like to get a 50 gallon drum and have it made into one. That size would be perfect but they are pricey to buy or get built. I used to know a bunch of certified welders when I worked construction but like an idiot I didn't keep in touch with any of them.

When Dad was AD AF he built a 316 stainless grill the size of a 55 gal drum.
The thing was bullet proof!

Those waiters should work a good wedding lol


But yeah that's fine sometimes no kids at the restaurant is better. Jersey has a lot of Italian restaurants.......pick a different place lol
