Plant sexing issues?

I started with 12 plants. 6 in a soil medium in individual pots and 6 in a general hydroponics eco-grower. I veg'ed using a 400w MH and switched to a 400w HPS for flowering. I am using seed because I have collected a bunch over the past couple years I really wanted to grow out and see what happens. Usually I would use clones for ease of growing. I am using BC products for nutrient and subculture beneficial bacteria.
My problem is this. I lost my first plant in the ecogrower only about three weeks into the veg. It was a male and it showed real early. Now I am into flowering and my two biggest healthiest plants have also gone male. Why would one plant tell me its a male at 3 weeks when others don't until a week into flowering?
Can I switch my plants from veg to flower to sex them and then back to veg once I weed out the males? The reason is that I want to keep as many plants in the ecogrower as possible. Seems like a waste to have a 6 site grower with only 4 plants in it.
Also, why is one plant fully flowering while all the rest except for the males show no sign of flowering at all. I know its different genetics but it seems that they should be flowering by now.
I'm not sure if this site is like the bodybuilding sites I post on but I assure you I am no noob to this scene at all. Other sites I post on people won't even acknowledge you until you get 50-75 posts. I would usually ask my mentor of sorts growing questions but he passed away very recently (cancer) and I have no more guidance in the growing realm. All the help would be greatly appreciated.
Thanks

You said you've been collecting seeds for years? If you're collecting them from bag seed, then you're going to get a variety of strains. Some of which drop their panties before others do.

I've heard of it being done, but I'm not sure how to go about it.

Some plants just take a while, bag seed collections tend to throw curves, nothing to worry about, nature knows what she's doing. :)

We're a friendly bunch, anyone that's growing is welcome to the forums. We like you especially if you aren't growing in your parents house. (like me) I'm sorry to hear about your mentor, who was he? What did he do?
It's hard to lose person-to-person advice, but I'm sure we'll make you feel at home.
Welcome and Good Luck!
