is it ok to cut the ends of 2liter bottles and start my plants off in them?
or is that a bad idea?

you can do that or use plastic party cups. be sure to make drainage holes.

You just don't want your roots to be exposed to light.

should i wrap the bottles in something to keep light out?

I think if your transplant before the roots get too big (maybe when they just start showing through) then you should be fine. Otherwise you can wrap them with construction paper maybe to help keep the light out.
