Ive heard of bud pinching but never pinching the stem. doesn't that shock the plant? I use LST and keep my lights close and i rarely even top my plants. they end up with average 25-30 tops after 4 weeks veg with very close nodes. but could u give some more info on this I'm interested?

Pinching is just pinching the stem hard until it crushes a bit and bleeds liquid a bit. It is more stressful as opposed to low stress training (LST).

If you compare the two, pinching vs LST, I have had major success with LST but only slight advantages with pinching. I think pinching is good for when you have limited height and width. If the only problem is height, I would recommend LST as wide as you have space.
