ScrOG question

So when you scrog you put some type of mesh or trellis above the plants and heres the question...do you leave the trellis the same height the whole time and allow the plants to grow through it or do you raise it until floweirng then let the tops go through it only and heres the main question...i have heard when you crop its best to hang the whole plant upside down...but what if with ScrOG you cant fit your fattened buds back throught the mesh...do you just harvest idividual buds?? also wouldnt it get tricky for watering if you cant move around the plants and the canopy is so thick?

u could cut the screen or cut buds out of screen..water with a pot with a spout
