Seedlings ok?

I don't have any REAL pics because I don't have a charger for my camera. So here it goes...

I planted several seeds a few days ago and yesterday morning some of them sprouted. The one that I am concerned about is probably about 2 inches tall. It's already developing it's first set of leaves. Them stem looks a dark red and the (see pic, sorry don't know proper name) has a dark color to it, as if it's dying?

I've looked around at other peoples seedlings stems and they don't look anything like mine, nor do those pedal things. I'm thinking the soil may be getting dried out to fast. I have them in fiber pots, so that could be the issue.

My soil mix is a variety of Scott's Potting soil, Sphagnum Peat Moss, and Perlite.

My soils ph is around 7.2, but I think it may be a little higher. I have a better soil and nute meter coming in the mail soon.
My temps range anywhere from 78-84 during the day and humidity at or around 40-45 percent. Do I need to find a way to keep them in a higher humidity range? I believe I've read that they love high humidity levels during this stage.

I currently have 6 x 26 watt 6500k cfl's suspended over them. And a set of 2' T8'S @ 17 watts. I got an oscillating fan in there, as well as a homemade Co2 setup.
