Socal Monsters finishing early!? When do yall plan to chop?

In Socal and a few days ago I saw the first ambers on the indica dominant Sunset Sherbet. I felt like another 7-10 days would get me to around 10% amber trichomes. No amber on the Sativa Dominant Blue Dream? (bagseed) but getting a little concerned for theives and mold if they get too chonky.

I plan on leaving mine till at least October 9 harvest moon but if they're not ready they're not coming down... only thing that worries me is losing buds to dumbass caterpillars
