Don't fret, I've had some strains that smell like crap, sort of a hay/grassy smell, outdoor tends to do that more, particularly if it's wet when chopped. Curing it over 2-3 weeks will remove that smell. Over that period it can go from that hay/grass smell to sweet/good smell. Assuming of course that you haven't dried it out too much before putting them into the curing jars, if they were you can add moisture using almost anything, I have used a small slice of potato for 8-12 hours, then remove it and continue the cure process until dry/cured. Of course if the strain smells like shit or doesn't smell at all it could be the strain, never experienced that myself but possible I suppose.
Burping (open/close the jar/tin you're curing in) for 8-12 hrs. a day is a too much imo and will dry it out before it's properly cured. I do 1-2 hours max burping at first, say first week. Then 15-30 min for second week, then 5-10 min for another week and you should be good to go.
The idea is to remove the excess moisture slowly over time, the slower you do that the better it'll smell imo. Typically if you get the dry timing right, the buds will be/feel dry like you described on the outside, but the core of the buds will still have moisture which is what you want to dry/finish during your cure.
