You have the right idea with putting the germinated seed in soil with no nutrients, then move it to its final pot after 1-2 weeks and start adding nutes.
As far as smell goes, 1 plant will still smell quite a bit once it gets into flowering. I would say as long as you have some form of ventilation and some good fragrance to spray in the air, you should be fine. I highly recommend Ozium if you can find it, it kills any scent and smells great. In a pinch, if family is coming over or something and the house stinks too bad, fry some bacon. The bacon smell will cover the pot smell for days, its a little trick I learned from my mentor
