Hey man, thanks for the interest in the mini fridge grow. It really is a perfect little stealth grow cab isnt it? I dont know why I see so many people spending $$$ building fancy wooden cabs to only put 150w of light in. First off, a wooden cab shouldn't hum, and it also just looks out of place so it usually needs to be hidden. I prefer the "hide in plain sight" method
As for your question, YES, take that hump out any way you can. I will not use my mini fridge again till I get that hump out. Ive seen it done two ways and they both have advantages. Pounding it back into itself is fast and easy compared to cutting and all that, but it looks like ass and you dont get as much room. Cutting the hump out and replacing it with some sort of metal (or even wood if its not visible) would be the best way to go, but a huge pain in the ass. For hydro especially you will want that thing out of there.
