How big the plant for transplant?

No it shouldn't be root bound. You should slide pot off occasionally and check , if roots are coming out the bottom of a plastic pot,its usually time or at least close. If they are root bound at transplant just rough them up a bit when you transplant. You wont fuckem up except to let it continue
One more question. If the rootball forms will the soil become "more solid" for it to be easy to hold the root in hand and not falling?
Now the soil is pretty brittle

Try this, before you try to repot wet the soil completely and press down to pack it lightly. When you ret pot turn the pot upside down with the plant stem between your fingers. Then squeeze the pot a bit and try lifting. Compare you plant to the one in the attach. and you should get a good idea if you plant is ready.
