Hello all,

Ive been lurking and soaking up info here for a while, and decided to step out from behind these comfortable bushes to say hello. I’m a boring ass white guy, living in flyover country midwest USA. My wife and I are both med users (unofficially), having entered the counter culture many years ago, recreationally. This special plant has done so much for us, and continues to alleviate ailments such as pain, stress, and sleeplessness to the point where I don’t ever want to be without it. Due to the archaic nature of our state, I don’t share pictures, only experiences and positive vibes. Anecdotally, anything I say is entirely bullshit and not to be believed . I’ve been gardening since the early 2000’s and trying to get better every day!

I am a classically-trained career chef, but had to hang up my apron when my wife got cancer and our 2 kids were diagnosed with special needs (Kicked out of daycare). I love to garden, cook, and go fishing when possible. My special ”thing” is growing rare and unusual hot peppers and then making unique hot sauces with them. I also trade pepper seeds by mail, and have amassed quite a collection! I’m into meat smoking and have a special interest in charcuterie practices, including old school preparations that aren’t done much anymore. I’ve been getting into fermentation, trying to move towards more sustainable organic gardening, and hopefully growing culinary mushrooms. I don’t have many friends who I can share my “special hobbies” with, so I came to RollItUp to be a part of a community of like-minded people, and continue to “stick it to the man”. Don’t be afraid to say hello, or throw some friendly shit talk my way - I miss that from working the kitchen and am difficult to offend. They were doing ok until we got an early frost last week. The good news is, I was waiting to rebuild my rotting raised beds, so I got to do that. I have a couple gallons of hot sauces so I’m good until next year and then some!

edit : I’m still half asleep - I grow a variety of peppers, from mild to wild, although a few past incidents involving kids and ghost peppers leads me to stick with milder now. I don’t grow much hotter than chocolate habaneros anymore, unless they are to give away.

Welcome to the neighborhood! Do you start your peppers inside in the winter and then move them outside once its warm enough? Check out the pepper section/gardening threads here if you haven't. What kind of fish do you try for? I'm lucky to have salmon, trout, bass, sturgeon and whatever else swims around in the Northwest.

Welcome to the neighborhood! Do you start your peppers inside in the winter and then move them outside once its warm enough? Check out the pepper section/gardening threads here if you haven't. What kind of fish do you try for? I'm lucky to have salmon, trout, bass, sturgeon and whatever else swims around in the Northwest.
I start my pepper seeds inside on February 1st and try to get them outside by the end of April. My hobbies compete for both space and time, so indoors, summer/fall/winter is “flowers” and end of winter/spring is baby peppers and tomatoes :-). I don’t get out much anymore to go fishing but when I do, I like to wade and fish the creek/river so it’s mostly smallmouth bass. I’m landlocked in the Midwest so it’s just freshwater fishing here. I’m jealous that you said you’re in the NW - I’ve recently gotten into mushroom hunting, and seeing the bounty you guys have available is just staggering. I do have a small patch of morels that grows in my woods though, so I can’t complain.

Thanks. That’s a food/beer baby you’re nurturing, so take good care of it. I’m really into cooking over fire for some reason; on a grill, over a fire pit, or with a smoker. Maybe it was all the camping as a kid, splitting tons of wood, or being a bit of a bored pyro before internet was common, I dunno. I make a lot of gravlax (cured salmon), beef jerky, sauerkraut, ice cream, tepaché (in summer), hot sauces - fresh and fermented - and I have a smoker that I play around with and make some neat stuff. I recently got a wok that I’m getting pretty good with, and am learning to use old school carbon steel pans, now that I finally have a gas stove at home. Favorite ? I love food and cooking. I can go on all day.

I can fish small mouth all day! Love flipping rubber in the spring when they are in their beds. Haven't found one that could resist a lizard!
