How long does it usually take for the plant to mature enough for you to know if it's male or female?

Around 8 weeks give or take,
You can look under the 4'th node and see preflowers,
they are very small and magnification is usually needed.

or you can look under the FAQ's it's all there.

Do you have one growing???

No I'm trying to learn everything before I start cuz I don't wanna hurt them.

yea just start growing, u cant do anything to control the sex so may as well start. it's growing a plant, not rocket science. remember from jurassic park? "life finds a way", you dont have to bust your balls over planting a seed.
