I heard that if you pinch the fan leafs that the buds will grow bigger, is this true? if so what exactly is meant when they say pinching?

It is not true. Plants only grow because they collect light rays that are then transformed into energy.
If you reduce the amount of light rays absorbed you reduce the level of energy the plant has to use for growth.
Also the main production of sugars and other things needed by a plant for growth are mainly produced in the large fan leaves so again if you remove them you are removing what the plant needs for growth.
Buds do not grow because they receive direct light, they grow because the plant grows and the plant grows because it has adequate light, and of course water and nutrients, so if you deprive a plant of what it needs you will reduce its capability to grow.
Also leaves do not take away growing energy from buds but instead provide the buds with the energy and chemicals they need to grow so again removing them is counterproductive to growth instead of stimulating or increasing bud growth.
