I woke up and saw this divide between my plant soil and the container. Any idea why? Is it normal?

Try some water. And yes it is normal, when you don't water.

If you lift that pot you will have knowledge of what a pot that needs watered feels like

Just a little at first so the soil can absorb it, if you just pour it right in the soil won't even get wet in the middle.

It got watered shortly after I posted this photo.

Question, what creates that 'pull' if you would? Is that my roots pulling the entire earth towards the main roots looking for water? What is the science behind it?

The soil is dehydrating. Imagine a dehydrated banana chip or potato chip. It shrinks.

Use some yucca extract and/or aloe flakes. They'll help recondition your soil and make it less hydrophobic.
