Stuffing needs tweaked a bit before I stuff the bird, more sage needed. I have a Mexican sage plant out back so I can put some fresh in it. My check back light is on so a little rest on the couch is required to hopefully reset it prior to getting the bird into the oven. Only us here so dinner time doesn't matter.

Bird is roasting, I should have used the rest of the bread I have dried out for stuffing. I had enough to fill the bird but no extra for the pan. I might save it and stuff a roasting chicken when the turkey runs out. Need to boil some potatoes for mashing and for the tuna salad, in a while.

I cooked collard greens from my garden ( about 4 bunches ) , two pawns of cornbread, and an experimental corn dish. And we had a large family dinner at a relative’s house with all the traditional stuff and a massive spread of desserts, I didn’t save room for the sweet stuff but I did squeeze in a little banana pudding. The dressing and gravy was really good, the ham was in some sort of marinade that was delicious, mashed potatoes and gravy was awesome and 5 kinds of homemade breads ( I have a real weakness for for fresh bread ) . To much stuff to list it all but my food was pretty popular, not much left to bring home.
Y’all let me know if you want to know more about the experimental corn dish, it is pretty good and makes a helluva good dip for tortilla chips.
PS I don’t know who cooked the turkey but it was as dry as the Griswall’s on Christmas Vacation.

Yes, please, more about the experimental corn dish. Also what kinds of bread? I made some scratch dinner rolls for the hub. He loves those things then he's eating mini turkey sliders on them for a solid week LOL

Before mentioned cornbread, yeast rolls, and I don’t actually know the rest but she makes this one loaf that is so good with butter, I eat that shit till I can’t eat another bite. I think there was a marbled rye and some kinda rolls that looked like sister Schubert’s dinner rolls but all homemade.

The corn dish:
Two cans whole kernel corn drained.
One can rotel. Even better if you sauté a jalapeño instead but I didn’t have any.
8 oz sour cream
8-16 oz heavy cream ( to your taste )
12 oz Colby jack cheese , grade and add half now
Season with season salt , black pepper, cayenne pepper, garlic power, onion powder and cumin
Mix these in a bowl with

8 oz bacon diced and rendered but not browned to crisp.
One medium white onion
As much garlic as you want minced
Sauté these and then add to mixing bowl
Mix well place in casserole pan
Top with remaining cheese and four pieces of butter. ( about a quarter stick diced up )
A little more cayenne and paprika for color.
Bake at 400 for 45 minutes.

I doubled everything for the large crowd. I’m still playing with the recipe so if anyone has recommendations please share.
I only had about 12 oz’s left, I microwaved it and ate it with some tortilla chips just a little while ago…. holy shit it’s delicious.
